Chris Lucas set to open Noẽma Greek restaurant inside $1bn Cbus Property building this spring

Hospitality giant Chris Lucas will open his most personal project to date — a modern Greek restaurant inside the $1bn Cbus Property skyscraper, inspired by his upbringing.

Melbourne hospitality tsar Chris Lucas says he’s finally caved into the pressure of his “food-obsessed” Greek family to open a restaurant honouring his heritage.

Noẽma will be the second venue to open inside the $1bn CBUS skyscraper in Mid Town Melbourne this year, next door to his three-level Hong Kong eating house Wishbone.

Lucas said the restaurant would be a “considered interpretation” of Modern Greek cuisine.

“My Greek heritage has always been an important part of who I am and forms much of my deep sense of hospitality,” he told the Herald Sun.

“But I’ve waited until now to explore it in a restaurant because I wanted to do it justice, and in way that reflects my long journey as a restaurateur.”

“Noẽma is inspired by the food, generosity and spirit I grew up with, while reflecting the exciting evolution of Greek cuisine that is happening today around the world and in Greece itself.”

A head chef is yet to be appointed, but the menu will showcase the best of local seafood, seasonal produce and charcoal cooking.

Olive oil, Greek feta, spirits and speciality products will be flown in from Athens.

Lucas told the Herald Sun in April that he and his wife Sarah had been incredibly hands on with both projects.

The power couple, along with long-time design partners Mitchell and Eades, will play architect and interior designer, calling the shots on how both restaurants should look and feel for ultimate functionality.

“CBUS asked us if we would help design the entire project, from the ground up, and design them properly as fit for purpose, attractive developments,” he said at the time.

“This meant we could choose where to put the windows to get the right balance of lighting into the building, how it looks on the outside, the finishes we wanted and even where to put the toilets.”

‘Noẽma’ is the Greek word for thought, understanding and contemplation.

Lucas said it was a fitting name as he wants Noẽma to be a “considered interpretation” of modern Greece cuisine.

Just like Wishbone, Noẽma will have a fully electric kitchen, aside from the charcoal grill.

Wishbone is set to open in October, with Noẽma opening in sometime in spring.
